Hot German Potato Salad

This is a good sweet & sour version. My husband uses a little bit more vinegar than 1/3 cup, he also mixes white and cidar vinegar.
Ingredients
- 9 Potatoes, peeled
- 6 slices Bacon
- 3/4 Cup chopped Onion
- 2 Tbsp. All-Purpose Flour
- 3 Tbsp. Sugar
- 2 tsp. Salt
- 1/2 tsp. Celery Seed
- 1 Tbsp. Black Pepper
- 3/4 Cup Water
- 1/3 Cup Vinegar

Step 1
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
Cook, drain and crumble bacon in a large skillet over medium heat. Reserve drippings.
Saute onions in drippings until they are golden brown.
In a small bowl, whisk together the flour, sugar, salt, celery seed and pepper. Add to the sauteed onions and cook till bubbly, then remove from heat. Stir in water and vinegar, then return to the heat. Bring to boil, stirring constantly. Boil and stir for 1 minute.
Carefully and gently stir bacon and potatoes into the dressing until potatoes are heated through.
