Zucchini Pie (Ginny's)

  • 3 zucchini
  • 1/4 cup onion
  • butter for sautéing
  • 1/4 teaspoon oregano
  • S & P
  • 9 eggs
  • 1 1/2 cups milk
  • 1/2 cup Parmesan cheese
  • 1 1/2 cups Bisquick

Preparation

Step 1

Using a mandolin, slice the zucchini thinly. Saute in skillet with the onion in a little bit of butter until tender crisp; add oregano and S & P.

In blender, blend all 9 eggs, milk, Parmesan cheese and Bisquick together; pour into greased 9" pie plate. Add the zucchini mix, and bake in preheated oven at 375 degrees for 30-40 minutes.
