Ingredients

  • 300 grams rigatoni or penne pasta
  • 1 lb uncooked mild Italian sausage
  • 1/2 medium onion chopped
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 Cup milk
  • 1/2 Cup chicken broth
  • 1 tbsp all-purpose flour
  • 6 cups baby spinach leaves, lightly packed
  • 1/4 Cup grated Parmesan Cheese

Step 1

Cook the pasta in a large pot of water until tender. Meanwhile, remove sausage meat from casings and place in a large, deep skillet over medium heat. Add onion, garlic, salt & pepper. Cook stirring to break up clumps, until no longer pink – about 5 minutes.
In a bowl whisk together the milk, chicken broth and flour. Add liquid mixture to the pan with the sausage and cook, stirring, until it comes to a boil. Reduce the heat and let simmer for 1 or 2 minutes, until smooth and thickened.
Drain pasta and add to pan with the sauce. Add the spinach, toss, then add the Parmesan cheese and mix well. Serve immediately, with additional Parmesan if you like. Serves 4 - 6
