Ingredients
- 2/3 cup sugar
- 3 tbs unsweetened cocoa powder
- Pinch of cinnamon
- 4 egg whites, room temp
- 1/4 tsp cream of tarter
- 2 squares semisweet chocolate, chopped
Preparation
Step 1
Heat oven to 250* Line to baking sheets with foil. In a small bowl whisk together the sugar , cocoa powder, and cinnamon. Place egg white in a standing mixer, add cream of tarter. Begin beating egg white on low speed using whip attachment until foamy increase speed to med. Add sugar mixture, 1 tbs at a time until stiff peaks form. Transfer to large pastry bag with large star tip – Pipe onto baking sheets. Bake 1 hour 15 min- do not open door- Turn oven off and let meringues sit in oven at least 30 min then remove baking sheets. Cool on racks. Place semisweet choc in a bowl and melt- drizzle onto meringues , let dry completely. Store in air tight container at room temp.
