Roasted Butternut Squash, carmalized onions and sriracha mayo burger

Ingredients

  • EVOO
  • butternut squash cubed (enough for how many sandwiches you are making)
  • red onion thinly sliced
  • lettuce
  • 4 TBsp mayo
  • 1 TBsp sriracha
  • buns

Preparation

Step 1

Peel and cub squash into 1-2 inch cubes (I make them smaller for my kids)
Lightly coat squash with EVOO, salt and pepper and roast at 400* until lightly crispy 40-50 minutes.

In a medium pan over med heat add a small amount of evoo and caramelize onions. set aside.

Combine mayo and sriracha in bowl.

Get your favorite buns or bread, toast them and assemble.

I like to add fresh spinach :)
