Ingredients

  • 1 c almond flour
  • 6 T arrow root powder (thickener)
  • 1/4 t salt
  • 1 egg
  • 1/4 c coconut oil
  • 1/4 c raw honey
  • 2 t vanilla
  • Blueberries

Preparation

Step 1

1. Whisk together almond flour, arrow root powder and salt.
2. Whisk together egg, coconut oil, honey, and vanilla.
3. Add wet ingredients to dry ingredients.
4. Gently fold in the blueberries.

Notes: this batter is thicker than what you are used to. Fill up the muffins tins much fuller because they don't rise much.

Bake 20-25 minutes at 350.
