Ingredients

  • Crust-
  • ◌ 12 graham crackers
  • ◌ 6 tbsp butter, melted
  • ◌ 6 tbsp sugar
  • Filling-
  • ◌ 2 8 oz pkgs cream cheese
  • ◌ 1 can of sweetened condensed milk
  • ◌ 3 eggs
  • ◌ 2 tsp vanilla extract
  • ◌ Fruit filling

Preparation

Step 1

Crust:
Crush graham crackers into crumbs in a plastic bag. Mix crumbs with melted butter and sugar. Mix well. Mix equal portions (about one tablespoon) into the bottom of paper lined or lightly greased muffin pans.

Filling:
Preheat oven to 300 degrees.

In a large mixer bowl, mix cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and vanilla; mix well.
Spoon equal amounts (about 2 tablespoons) into prepared muffin cups.

Bake for 20 minutes or until set.

Cool. Chill. Top with filling.
