Trail Mix Cookies

Almost healthy trail mix cookies! :)

Made with whole wheat flour and oatmeal, these hearty cookies make a tasty snack.

Ingredients

  • 1 cup whole wheat flour
  • 1 1/2 cup crushed corn flakes
  • 1 cup oatmeal
  • 2/3 cup coconut
  • 2/3 cup dark chocolate chips
  • 2/3 cup brown sugar, not packed
  • 2/3 cups raisins
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3 TBSP apple sauce
  • 3 TBSP grade a maple syrup
  • 1/2 cup blanched peanuts, halved
  • 1 egg

Preparation

Step 1

These cookies come together easily! It's just a matter of throwing everything together in one big bowl :). I like to mix the dry ingredients together with a fork first, then I add the rest of the ingredients :).

Use a medium sized cookie scooper to scoop the cookie dough on a nonstick cookie sheet. Bake for 7 minutes in a 375 degree oven.
