Chocolate Mouse

Ingredients

  • 12 ounce semi sweet chocolate bits
  • 2 eggs
  • 4 egg yolks
  • 4 egg whites
  • 2 tsp vanilla
  • 2 cups heavy cream
  • 2 tsp powdered sugar
  • 6 strawberries optional

Preparation

Step 1

Melt chocolate in double boiler, remove from heat. Separate the 4 eggs. Crack 2 eggs add to the 4 egg yolks, beat with fork. Stir in chocolate until all same color. Beat 4 egg whites with mixer till stiff peaks, gently fold egg whites in chocolate and whip ¾ cup of heavy cream until stiff peaks, fold into chocolate. Pour into bowls refrigerate about 2 hours when firms whip rest of the heavy cream until forms peaks. Stir in vanilla and sugar into cream and put on top of mouse. Top with strawberries if desired.
