Spinach Salad

Ingredients

• 1/4 c oil
• clove garlic, small and minced
• 4 bacon slices, crispy and crumbled
• 3 eggs, hard boiled and chopped
• 1/3 c onion rings
• 1 qt torn spinach
• 2 wine vinegar
• 1/4 tsp dry mustard
• 1/4 tsp salt
• pepper to taste
• 2 T Parmesean cheese

Preparation

Step 1

Place spinach in bowl. Top with bacon and eggs. Pour oil over both and toss. Mix wine vinegar, dry mustard, salt, pepper and Parmesan together. Pour dressing over spinach mixture and toss.
