  • 1 medium head cauliflower
  • 1/3 cup chicken broth, warmed
  • 2 tablespoons reduced fat sour cream
  • Salt and Pepper
  • Thinly sliced fresh chives for garnish



Step 1

Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.

Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth. Serve garnished with sliced chives
