- 8 oz. macaroni (no salt)
- 16 oz. lowfat ricotta cheese (puree-smooth)
- 2 tbsp. flour
- 2 cups milk
- 1 cup sharp cheddar
- 1 tsp. salt
- 1/4 pepper
- 1/4 grated parmesan

Step 1
Grease 2 1/2qt. casserole dish. Boil macaroni as directed. Puree 16oz. ricotta cheese until smooth. Whisk flour and 1/4 cup milk until smooth. Slowly whisk in additional 1 3/4 cup milk over medium heat. Stir until thick; boils.
Stir in ricotta cheese, sharp cheddar, salt & pepper. Spoon in macaroni; stir. Bake for 20 minutes in 375F oven. Remove and top with grated Parmesan. Broil 2-3 minutes until golden brown.
