Ingredients
- Breakfast
- 1 1/4 cups flour
- 1/3 cup coarsely ground flax seed
- 3 Tablespoons sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- Dash of nutmeg
- 2 eggs, separated
- 1 1/4 cups milk
- 1 Tablespoon oil
- 1 cup pared and shredded apple (shred just prior to adding to batter)
Preparation
Step 1
1. In a large bowl, combine flour, flaxseed, sugar, baking powder, salt, cinnamon and nutmeg.
2. In medium bowl, lightly beat together the eggs yolks, milk and oil.
3. In a separate bowl, beat egg whites until stiff peaks form.
4. Add egg yolk mixture to the dry mixture and stir until just combined.
5. Shred apple and add to batter.
6. Fold in egg whites.
7. Preheat griddle; spray with Pam. Pour 1/3 cup batter for each pancake and cook until bubbles appear, about one minute. Turn and brown.
Makes 12 pancakes.
