Salmon Patties

Ingredients

  • Optional items to add:
  • 1 (14.75 oz) can salmon, drained & flaked, bones crushed
  • 1 egg
  • 8 saltine crackers, crushed into fine crumbs or 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • Salt & pepper to taste
  • 1/2 cup corn meal
  • 1/4 cup oil
  • 1 tsp chopped capers, garlic, shallots, Dijon mustard or lemon juice

Preparation

Step 1

1. Pour corn meal onto plate or in a bowl & season with salt & pepper. Set aside.

2. Mix salmon, egg, cracker crumbs, chopped onions, and salt & pepper in mixing bowl.

2. Make into patties. Dip into cornmeal to lightly coat.

3. In a frying pan, heat oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.
