Ingredients
- 6 pork chops (about 3/4-inch thick)
- 1-1/4 cup extra virgin olive oil
- Juice of 4 large lemons
- 3 cloves garlic, minced
- 2-1/2 tablespoons Greek oregano
- 7 medium sized potatoes, cut into 1/2-inch wedges
- 1/2 cup water
- Salt and pepper to taste

Mix 1/2 cup olive oil, with the juice of 2 lemons, minced garlic, and 2 tablespoons of Greek oregano. Marinate pork chops in mixture. Cook pork chops on the grill on medium-high heat for 10-15 minutes, or until medium-well done.
Drizzle a very small amount of olive oil over the potatoes. Add ½ tablespoon of oregano, salt and pepper, and mix it all together. Place the seasoned potatoes on a shallow baking pan. Pour the remaining olive oil, about 1/2 cup, juice from 2 lemons, and half the water in between the gaps between the potatoes. (Do not pour over the potatoes—you will wash off the oregano!)
Bake for 45-60 minutes at 450 degrees Fahrenheit, until golden and crispy.
Serve pork chops and potatoes together.
