Chocolate Eclair Ring

Ingredients

• ECLAIR
• 1 cup water
• 1/2 cup margarine
• 1 cup flour
• 4 eggs
• FILLING
• 2 (3 3/4 oz) package instant vanilla pudding
• 2 1/2 cup milk
• 8 oz Coolwhip
• 1 teaspoon vanilla
• GLAZE
• 2 squares unsweetened chocolate
• 2 tbsp milk
• 2 tbsp butter
• 1 tsp vanilla
• 1 cup powdered sugar

Preparation

Step 1

ECLAIR
Combine water and margarine in a pan and bring to a rolling boil. Add flour all at once, stiring constantly. Remove from heat. Add eggs one at a time, beating thoroughly after each one. Form in a ring on an ungreased pizza pan or cookie sheet. Bake at 375 degrees for 40-50 minutes. When cool slice in half through the middle.

FILLING
Beat pudding and milk until thick; add vanilla. Fold into Coolwhip. Spread between top and bottom of ring.

GLAZE
Melt chocolate and butter together. Add milk and vanilla. Add powdered sugar. Drizzle on top of ring and refrigerate.

Sprinkle powdered sugar on top.
