Ingredients
- Cilantro Hummus:
- 1 medium cucumber
- 2 vine ripened tomatoes
- 1 small sweet onion
- 1 medium red pepper
- 1 medium yellow pepper
- 2 tb greek dressing
- feta cheese to taste
- 1 bag multi grain mini bagels
- 14 oz can garbanzo beans (drained, but reserve juices)
- 3 tb tahina
- 1 sm bunch cilantro (chopped)
- 2 tsp minced garlic
- juice of 1 lime
- 1 tb olive oil
- pinch of sea salt
Preparation
Step 1
Roasted Vegetables:
Thinly slice all veggies. Pour dressing over veggies and toss until evenly coated. Place in 400 degree oven for 25-30 minutes.
Cilantro Hummus:
Combine all ingredients in a food processor until smooth. If the hummus is too thick add reserved garbanzo bean juices until the right consistency is reached.
Constructing Your Sandwiches:
Spread hummus onto the top half of each bagel. Spoon vegetable medley onto the bottom half, then top with desired amount of feta cheese. Combine halves and enjoy!
