Quick Shrimp Chowder

  • 2 cups veg broth
  • 2 teaspoons minced fresh thyme
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped carrot
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 tablespoons all-purpose flour
  • 1 lb shrimp (peeled and deveined) any size
  • 1/3 cup heavy cream



Step 1

Come broth thyme and pepper in large sauce pan and bring to boil

Heat in medium skillet over medium heat oil, carrot, onion, celery for 3 minutes until tender. Add flour, stirring. Stir carrot mixture and shrimp into broth. Simmer for 5 minutes. Add cream, simmer four minutes
