buttermilk pancakes

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup oil

Preparation

Step 1

stir first 5 ingredients together in a large bowl until well blended. whisk eggs, buttermilk and oil in a separate bowl until well blended. add to dry ingredients, stir until just blended together.
DO NOT OVERMIX, BATTER CAN BE LUMPY.
heat a nonstick skillet on medium-high heat.
pour 1/3 cup of batter into skillet cook 2-3 minutes or until bubbles start to form on top and bottom is golden brown. flip and cook another 1-2 minutes.
