Yellow Split Pea Soup (Canadian)

Ingredients

  • 1/2 lb. salt pork
  • 1 lb. yellow split peas, pre soaked
  • 1 onion
  • 1 carrot, sliced
  • 1 garlic clove, minced
  • 6 C water
  • 1/4 tsp. thyme
  • 1 bouquet garni: parsley, 1 bay leaf, and celery leaves
  • salt and pepper

Preparation

Step 1

Dice the salt pork and fry in a skillet until golden brown. Spoon into slow cooker. Add all other ingredients. Cover, and turn on low for 8 to 10 hours. Remove bouquet garni from the pot before serving.
