CARROT CAKE

Ingredients

  • 1-1/2 Cups Walnuts
  • 1-1/2 tsp. Cinnamon
  • 3 cups Flower
  • 1 tsp. Nutmeg
  • 3 tsp. Baking Powder
  • 3 tbsp. Milk
  • 1 tsp. Salt
  • 3 cups grated Carrots
  • 4 lge. Eggs
  • 1 cup Veg.Oil
  • Cream Cheese Frosting
  • 6 oz. Cream Cheese
  • 1/3 cup Butter Or Margarine
  • 3-1/2 cups Confectioners Sugar
  • 1-1/2 tsp. Vanilla
  • 1 tsp Milk

Preparation

Step 1

Chop 1/2 cup of the Walnuts fine.
Grease 3-9" Pans.
Sprinkle each with 2-1/2 tbsp.of the chopped Walnuts.
Chop remaining Walnuts coarsely, set aside.
Mix Flower,Baking Powder & Salt, set aside.
Beat Suger,
Eggs, Oil & Spices.
Beat on high speed until light & fluffy.
Add 1/2 of Flower mixture, blend and add Milk and remaining
Flower.
Mix well.
Stir in Carrots & Chopped Walnuts. Pour into pans.
Bake in 350 Deg. oven 25 mins. test for doneness.
Cool in pan for 10 mins. then on rack. When cold, frost with
Butter,Cream or Cream Cheese frosting.
Frost just tops of layers, Decorate with Walnuts.
