Chicken Breast Diane

Ingredients

  • 4 skinless, boneless chicken breasts
  • 1/2 tsp salt
  • 1/4 to 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 tbsp chopped fresh green onions
  • juice of 1/2 lemon or lime
  • 3 tbsp chopped parskley
  • 2 tsp Dijon-style mustard
  • 1/4 C chicken broth

Preparation

Step 1

1. place chicken breasts between sheets of waxed paper

2. pound as thin as possible with mallet or tenderizer

3. sprinkle with salt and black pepper

4. heat 1 tsp of oil and butter in large skillet

5. cook chicken over med-high heat for 5 minutes on each side or until nolonger pink

6. do not cook longer or they will be overcooked and dry

7. transfer to warm serving platter

8. add green onions, lime or lemon juice, parsley and mustard to pan

9. cook 15 seconds, whisking constantly

10. whisk in broth and stir until sauce is smooth

11. whisk in remaining butter and oil

12. pour sauce over chicken and serve immediately
