Whoopie Pies

Ingredients

  • CAKES
  • 1 Pkg devil's food cake mix without pudding and pie filling mix
  • 1 Pkg (4 servings size) chocolate instant pudding and pie filling mix
  • 4 eggs
  • 1/2 cups (1stick) butter softened
  • 1 cup water
  • FILLING
  • 1 1/4 cups marshmallow creme
  • 3/4 cup (1 1/2 sticks) butter
  • 3/4 cup 10X sugar
  • 1 cup teaspoon vanilla

Preparation

Step 1

1. Preheat oven to 350' F. Light coat nonstick cookie sheets with nonstick cooking spray.

2. Beat cake mix, puding mix, eggs, 1/2 cup butter and water in large bowl with electric mixer at low speed just until moistened. Beat at medium speed for 2 minutes or until light and thick, scraping down side of bowl frequently.
Drop batter by heaping tablespoonfuls 2 inches apart onto prepare cookie sheets.

3. Bake 12-14 minutes or until cakes spring backs when lightly touched. Cool 5 minutes on cookie sheets. Transfer to wire racks to cool completely.

4. Beat marshmallow creme, 3/4 cup butter, powdered sugar and vanilla in large bowl at high speed 2 minutes or until light and fluffy.

5. Spread filling on flat side of half of cakes; top with remaining cakes.
