Vanilla Peach Pudding

  • 1 can (1 pound, 13 oz) can sliced peaches
  • 1 teaspoon lemon rind
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 Tablespoon tapioca
  • 1 Tablespoon butter
  • 1/4 cup butter, softened
  • 1/4 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla

Preparation

Step 1

Drain 1 can of sliced peaches, reserving 1 cup of the syrup and mix it with the peaches, 1 teaspoon lemon rind, 1/4 teaspoon salt, vanilla and tapioca. Turn into a 1 1/2 quart baking dish. Dot top with 1 Tablespoon butter.

In a large bowl, soften 1/4 cup butter and gradually blend in 1/4 cup sugar. Add 1 egg. In a medium bowl, sift together 1 1/2 cups sifted flour, 2 1/2 teaspoons baking powder and 3/4 teaspoon salt. Add alternately with the 1/2 cup milk mixed with 1 teaspoon vanilla.

Beat batter about 20 strokes. Spread uniformly over peaches.

Bake in preheated 350 degree oven for 1 hour and 15 minutes or until browned. Serve hot.
