Roast Beef with Horseradish Sauce

Ingredients

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon dried oregano
  • 1 (3 pound) eye-of-round beef
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • Horseradish Sauce (recipe follows)

Preparation

Step 1

Combine seasoning in a small bowl. Rub mixture over entire roast. Place roast in slower cooker (cut in half, if necessary). Cover and cook on LOW for 8 – 10 hours.

Remove roast to a cutting board, reserving juices in slow cooker. Let roast stand for 15 mins; cut diagonally across the grain into thin slices.

Serve with Horseradish Sauce, and if desired, au jus (meat juices).

Horseradish Sauce
1 (8oz) carton of sour cream 1 clove of garlic, crushed, or 1/8 ts. garlic powder
½ cup of mayonnaise
1 TS of prepared horseradish

Combine all ingredients in small bowl; cover and chill. Yields 1 ½ cups
Note: This is perfect for a buffet table, served with small rolls
