Bruschetta Classica (Skinny Italian)

Ingredients

  • 1 loaf of wide crusty Italian bread, cut into 1/2" thick slices
  • 5 plum tomatoes, cored, seeded and cut into 1/2" dice
  • 1 garlic clove, minced
  • 1 tsp Balsamic vinegar
  • 3 Tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper

Preparation

Step 1

Heat oven to 450 degrees and position rack in center of oven. Place bread slices on a baking sheet and brush with 2 Tbsp of the olive oil. Bake just until the bread begins to toast, about 5 minutes. Remove from oven and cool.

Mix remaining ingredients in a bowl and let stand at room temperature for about an hour for the flavors to meld.

Top bread slices with tomato mixture.
