Tomato and Bagel Salad

Ingredients

  • Dressing:
  • 3 plain bagels
  • 2 medium tomatoes
  • 1 bunch asparagus, blanched and cut into 2-inch pieces
  • 12 ounces small fresh mozzarella balls, drained
  • 1/2 red onion, thinly sliced
  • 6 leaves fresh basil, cut in thin strips
  • 2 medium tomatoes, halved
  • 1 tbsp chopped shallots
  • 2 tbsp chopped garlic
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/2 tsp crushed red pepper

Preparation

Step 1

Preheat oven to 375 F.

Cut bagels in half, then cut each half into 6 wedges. Spread in a pan and bake for 8 to 10 minutes, or until lightly toasted. Remove from the oven and let cool for 5 to 10 minutes.

To prepare the dressing, combine all ingredients in a blender and puree.

For the salad, cut tomatoes in half, then cut each half into 8 wedges. In a large bowl, combine tomato wedges, asparagus, mozzarella, onion, basil and bagel wedges. Add the dressing and stir to blend.
