Ingredients

  • 1 can Progresso black beans
  • 1 can white shoepeg corn or Mexican corn
  • 1 red onion
  • 1 bunch of cilantro
  • Lots of fresh garlic
  • 1 bell pepper - I like to use a red or yellow one if I can get them
  • 1-2 fresh limes
  • 2 ripe Roma tomatoes, seeded and chopped, and/or
  • 1 can of Rotel tomatoes, chopped - They have this new kind w/lime and
  • cilantro. I found them at Calandro's.
  • Pickled or fresh jalapenos to taste
  • Salt, cumin, chili powder, red pepper to taste. Enough olive oil to
  • bind it

Step 1

Rinse and drain the black beans thoroughly. Drain the corn well. Put
in large bowl for mixing. Mince the garlic - I put mine in a small food
processor with a little olive oil; Chop the red onion, bellpepper and
jalapenos very fine. Mince the cilantro. Drain the Rotel well. If
using fresh tomatoes, seed and drain the juice before chopping. Mix
everything together thoroughly. Season to taste and add olive oil and
lime juice. It is better if you let it sit in the refrigerator
overnight.
