Hash-brown Egg Cups

We have taken to calling these "bird's nests". And we like to add a little ranch dressing powder to the hash-browns.

Ingredients

  • 3/4 c shredded Cheddar Cheese
  • 2 c (20oz bag) shredded Hash-browns thawed
  • 1/4 c Green Onion sliced
  • S&P
  • 2 eggs
  • 1/8 tsp Italian Seasoning

Preparation

Step 1

400*
Spray ovenproof bowls or ramekins
Reserve 2 tb cheese
Mix remaining cheese thru S&P
Press mix into each bowl leaving indentation in center
Bake 25-30 min.
Remove, break egg into centers
Sprinkle w/ italian seasonings & cheese
Bake 8-12 min.
