Orange Polenta Almond Cake

Recipe doesn't say anything about what happens to the orange seeds during this process. I haven't tried it yet, so don't know!

Ingredients

  • Mascarpone Grand Marnier Cream:
  • 1 1/2 quarts water
  • 2 oranges
  • 1 cup flour
  • 2 tbsp cornstarch
  • 1 cup polenta
  • 1 1/2 cups toasted blanched almonds
  • 1 1/2 cups butter, softened
  • 2 cups sugar
  • 6 eggs
  • 1 tsp vanilla extract
  • 16 ounces Mascarpone cheese
  • 4 tbsp Grand Marnier
  • 4 tbsp confectioners' sugar
  • 1 tsp grated orange peel

Preparation

Step 1

Preheat oven to 325 F. Butter two (8-inch) cake pans.

Bring water to a boil in a large saucepan. Add whole oranges and simmer for 30 minutes. Drain and let cool.

In a mixing bowl, combine flour, cornstarch and polenta.

Grind almonds in a food processor until finely ground. Stir into the dry ingredients and set aside.

Puree the oranges in a food processor.

Cream together butter and sugar. With the mixer running, add eggs one at a time. Add orange puree and vanilla. Add dry ingredients and mix until combined.

Pour into the prepared cake pans and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.

To prepare the Mascarpone Grand Marnier Cream, combine all ingredients and blend until smooth. Serve with the cake.
