Ingredients

  • 1 c fresh green beans, blanched, drained, and cut into 1/4" pieces
  • 2/3 c hearts of palm, cut into 1/4" pieces
  • 1 c diced tomatoes
  • 16 extra large cooked shrimp, cut into 1/4" pieces
  • 1 c jumbo lump crabmeat
  • 4 c field greens
  • 1 ripe avocado, slices
  • Russian Dressing
  • 2 T finely diced red bell pepper
  • 2 T finely diced green bell pepper
  • 2 T finely diced yellow bell pepper
  • 1 c mayo
  • 1/2 c ketchup
  • 2 T Worcestershire sauce
  • 4 T red wine vinegar
  • 2 T champagne vinegar
  • Salt and pepper to taste

Preparation

Step 1

In a large bowl, combine all the salad ingredients except the avocado.

In a small bowl, mix together Russian dressing ingredients. Add whatever amount of dressing you desire to salad and toss. Garnish with avocado slices.
