Ingredients

  • 10.5 oz Chicken Breast
  • 1 Cup Celery - chopped
  • 2 TBSP Parsley - chopped
  • 1 Bay Leaf - small
  • 1/8 tsp Thyme
  • 1/2 Cup Tomatoes
  • 1.25 Cups Mushrooms - quartered
  • 1 Cup Water or de-fatted broth
  • Salt and Pepper - to taste

Preparation

Step 1

Brown Chicken in non-stick pan glazed with diet salad dressing, then transfer to casserole with cover. Add celery, parsley, bay leaf, thyme and broth or water. Cover and bake at 350` for 45 minutes; add mushrooms and cook 15 minutes longer or until chicken is tender. Remove bay leaf, add salt and pepper, sprinkle chopped parsley on top and serve. Serves 3
