Ingredients
- 2 Tablespoons vegetable oil
- 1/2 cup chopped onion
- 2 cups cooked turkey, cubed
- 1 teaspoon tarragon
- salt and pepper
- 2 Tablespoons margarine
- 1/2 cup chopped green pepper
- 2 cups cubed cooked potatoes
Preparation
Step 1
Preheat oven to 400 degrees. Lightly grease a 9 x 13 baking dish. Heat oil and margarine in a large heavy skillet. Saute onion and green pepper until soft, but not browned. Add turkey, potatoes and seasonings and stir to combine ingredients. Press down with a spatula and cook 5 minutes. Stir and transfer to baking dish. Bake until top is crusty and brown, about 10 minutes.
