Ingredients
- 1 cup chopped tomato
- 1 lb. mushrooms, sliced
- 1/2 cup chopped onion
- 3 cups chicken broth
- 1/2 cup butter or margarine
- 1/2 cup red wine
- 1/8 tsp. pepper
- 1 tsp. salt
- 1 cup cooked green peas
- 1/4 cup grated Parmesan cheese
- 1 cup rice
Preparation
Step 1
In a large skillet, cook rice, tomatoes, mushrooms and onion in butter for 10 minutes, stirring occasionally. Add broth, wine and seasonings. Cover. Simmer 45 minutes, or until rice is tender and liquid is absorbed. Stir in peas. Add cheese.
