BRANDIED WILD MUSHROOM SOUP

Ingredients
- 1 cup finely chopped onions
- 3 T. butter
- 4 oz. fresh cremini or porcini mushrooms, chopped
- 4 oz. fresh shitake mushrooms, stems removed and chopped
- 4 oz. fresh oyster mushrooms, chopped
- 1.5 t. snipped fresh thyme
- 2 T. brandy
- 1 T. flour
- 2 cups chix broth
- 1/2 cup whipping cream
- white truffle oil
- salt & pepper

Preparation
Step 1
In large saucepan cook onions in butter over medium high heat 5 min. or until tender. Add all mushrooms & thyme. Cook & stir 8 min. or until mushrooms are tender. Remove from heat and add brandy. Return to heat for 30 sec. stirring constantly. Stir in flour. Cook & stir 1 min. Stir in broth & whipping cream. Bring just to boil. Reduce heat, simmer uncovered 10 min.
Cool mixture slightly. Transfer half to blender or food processor. Blend until smooth. Repeat with other half. Return soup to pan and heat through. Ladle soup into bowls and drizzle with oil. Top with sea salt and cracked black pepper.
