Pork with Spicy-Sweet Pepper Sauce for Two

Roasted pork seasoned with garlic, ginger, salt and pepper with a delicious spicy sweet pepper sauce. Serve over a bed of rice for an impressive and satisfying meal.

Ingredients

  • SAUCE:
  • 1 (14-ounce) pork tenderloin (400g)
  • 1 clove garlic, minced
  • 1/4 teaspoon gingerroot, grated (1mL)
  • 1/4 teaspoon salt (1mL)
  • 1/4 teaspoon pepper (1mL)
  • 2 teaspoons vegetable oil (10mL)
  • 2 teaspoons vegetable oil (10mL)
  • 1/4 sweet red pepper, sliced
  • 1 hot red pepper, coarsely sliced
  • 1 clove garlic, minced
  • 3 tablespoons smooth Thai chili sauce (45mL)
  • 1 tablespoon brown sugar, packed (15mL)
  • 1 tablespoon rice vinegar (15mL)
  • 1 tablespoon sodium-reduced soy sauce (15mL)
  • 1 teaspoon gingerroot, minced (5mL)
  • 1 green onion, chopped

Preparation

Step 1

Sprinkle pork with garlic, ginger, salt and pepper; let stand for 10 minutes.

In ovenproof skillet, heat oil over medium-high heat; sear pork all over, about 5 minutes.

Transfer to 400°F (200°C) oven; roast until juices run clear when pork is pierced and just a hint of pink remains inside, 15 to 20 minutes. Transfer to cutting board and tent with foil; let stand for 5 minutes before slicing.

Sauce:

Meanwhile, in small saucepan, heat oil over medium heat; cook red pepper, hot pepper and garlic until tender, about 3 minutes.

Stir in chili sauce, sugar, vinegar, soy sauce and ginger; simmer, stirring, until reduced to 1/2 cup (125mL), about 4 minutes. Stir in green onion. Pour sauce over pork to serve.
