Spinach & Bacon Salad

Ingredients

  • 1 1/2 # Baby Spinach Washed & Bite Size
  • 6 Strips Crisp Crumbled Bacon
  • 1/2 C Slivered Almonds
  • 2 Hard Boiled Eggs Sliced
  • 3 T Green Onions Sliced
  • 1/2 C EVOO
  • 1/4 t Salt
  • 6 T Tarragon Wine Vinegar
  • 2 t Sugar
  • 1 t Dry Mustard
  • Dash of Pepper

Preparation

Step 1

Preheat Oven 250F, Toast Almonds 6-8 Minutes

Large Bowl, Add Spinach, Almonds, Bacon, Egg & Onions.

Small Bowl, Whisk Vinegar, EVOO, Salt, Sugar, Mustard & Pepper.

Pour Over Spinach & Toss Gently.
