Creme de Menthe Ice Cream Pie
My all time favorite dessert. Served many times at dinner parties.
- Fudge Sauce:
- 3 pts vanilla ice cream
- 5 T green creme de menthe
- 2 C Nabisco chocolate wafer - crumbs (2 boxes)
- 1/3 C butter, softened
- 3 oz. unsweetened chocolate
- 1/2 C water
- 3/4 C sugar
- 1/4 tsp salt
- 4-1/2 tsp butter
- 3/4 tsp vanilla
Combine wafer crumbs with butter and press into 10" spring form cake pan, or 9" pie pan. Refrigerate about 1 hour.
Turn ice cream into large bowl to soften. When almost liquid, add creme de menthe and swirl it through the ice cream.
Fill wafer shell with ice cream and freeze.
Combine chocolate with water. Cook over low heat, stirring occasionally until chocolate is melted. Add sugar and salt. Cook, stirring constantly until sugar is melted and mixture is thickened. After about 5 minutes remove from heat and stir in butter and vanilla. Cool thoroughly. Then drizzle over top of pie and return pie to freezer. Serve extra syrup with pie.
Your guests will gasp at the thought of calories, then ask for seconds!! The home made syrup makes a big difference.
