Ingredients
- 2 tomatoes, cut into 6 wedges each
- 2 cucumbers, peeled and sliced about 1/2" thick
- 1 red onion, cut in half and then sliced about 1/4" thick
- 1/2 cup vinegar (red wine vinegar, regular white vinegar, or I prefer apple cider vinegar)
- 1/2 cup sugar
- 1/2-1 cup water

Preparation
Step 1
In a large bowl, mix together vinegar, sugar and 1/2 cup water, if the mixture is too strong, add a little more water until desired taste.
Place all cut vegetables in bowl and coat with mixture.
Cover and refrigerate for one to two hours. Stir, and refrigerate at least another hour or overnight to allow the vegetables to soak up the flavor.
