Ingredients
- 1 1/4 cups Cap'n Crunch cereal
- 6 tablespoons unsalted butter
- 1/4 cup creamy peanut butter
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cake flour
- 2/3 cup semi-sweet chocolate chips
Preparation
Step 1
Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.
Process Cap'n Crunch in a food processor until finely ground.
Melt butter in a small saucepan over medium heat; cook 1-2 minutes, whisking frequently, until butter foams and turns light golden brown.
In a large mixing bowl, using a mixer on medium speed, beat together browned butter, peanut butter, brown sugar and granulated sugar until well combined and grainy - about 2 minutes. Beat in vanilla, egg, baking soda and salt and beat an additional 2 minutes. Reduce mixer speed to low and beat in Capn Crunch and flour until just combined. Stir in chocolate chips until combined.
Drop heaping, round tablespoons of dough onto cookie sheets. Bake 12 minutes or until golden brown. Cool 2 minutes before transferring cookies to wire racks to cool.
Makes 16 big cookies
