Roasted Garlic green Beans with cashews

Ingredients

  • 10 garlic cloves, unpeeled
  • 2 tsp + 1/4 c oil
  • 2 lbs fresh green beans1 c water
  • 1 c lightly salted cashews
  • 1/2 tsp salt
  • 14 tsp pepper

Preparation

Step 1

Preheat oven to 375
Cut stem off of garlic coves
Place cloves in a piece of foil and frizzle with 2 tsp oil
Wrap in foil and bake about 25=30 minutes until cloves are soft
unwrap and cool
Squeeze garlic from skins and mash into a paste

Heat remain oil in dutch oven over med hi heat
Add beans and garlic for 2-3 minutes
Add water and bring to a boil
Simmer uncovered for 7-10 minutes until beans are criap tender
and water has almost evaporated, stirring occasionally
Add cashews and seasonings and toss
