Ingredients
- 1/2 cup chopped raisins
- 1/2 cup chopped mixed candied fruit
- 1/3 cup sugar
- 2 tbs water
- 1 tbs lemon juice
- 1/2 cup bakers coconut
- 1 3/4 flour
- 2 1/2 baking powder
- 3 tbs sugar
- 3/4 tsp salt
- 1/3 cup shortening
- 1 egg slightly beat
- 1/3 cup light cream
Preparation
Step 1
Combine fruit, 1/2 cup sugar, water, lemon juice, coconut in pan. Cook and stir over low heat until sugar is dissolved and mixture is well blended, cool. Mix flour and 3 tbs sugar, baking powder and salt. Cut in shortening. Add egg, cream stirring and form soft dough. Knead on flour. Roll into rectangular spread filling over dough. Roll as for jelly roll. Moisten edges and press to seal. Form ring on greased sheet. Cut 2 inch slices with scissors on outer edge. Turn slices cut side up overlapping the edges. Bake at 400* for 20 to 25 minutes. Glaze and decorate.
