Bruschetta with Gorgonzola and Apples

Ingredients

  • 1/3 cup (about 1 1/2 ounces) crumbled Gorgonzola cheese
  • 2 tbsp butter, softened
  • 1 tbsp brandy or cognac
  • 1/8 tsp ground black pepper
  • Cooking spray
  • 12 slices (12 ounces) diagonally cut French bread, about 1 inch thick
  • 6 garlic cloves, halved
  • 3 Granny Smith apples, each cut into 8 wedges (about 18 ounces)

Preparation

Step 1

Combine cheese, butter, brandy and pepper in a small bowl, stirring until blended.

Heat the grill to medium and coat with cooking spray. Add the bread slices and cook for 2 minutes on each side, or until lightly browned.

Remove the bread from the grill and rub one side of each slice with the cut side of a garlic clove. Spread 2 tsp of the cheese mixture over each bread slice.

Serve with apple wedges.
