Chocolate Dipped Shortbread Cookies

Ingredients

  • 1 cup (250 mL) butter, softened3/4 cup (175 mL) icing sugar1 tsp (5 mL) vanilla2 1/2 cups (625 mL) all-purpose flour1 cup (250 mL) semisweet chocolate chips2 tsp (10 mL) shortening

| Makes:4 1/2 dozen (48) 1 1/2 inch cookies

Heat oven to 350ºF. Line cookie sheets with parchment paper.

In large bowl, beat butter, icing sugar and vanilla with spoon. Stir in flour. (If dough is crumbly, mix in 1 to 2 tablespoons more butter, softened.)

Roll dough 1/2 inch thick on lightly floured surface. Cut into small shapes by hand or use cookie cutters. Place 1/2 inch apart on parchment paper-lined cookie sheet

In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 to 1 1/2 minutes or until melted; stir until smooth. Dip half of each cooled cookie into melted chocolate. Place on waxed paper until chocolate is set.
