Lamb Croquettes (Grammy's)

Ingredients

  • 2 Tablespoons butter
  • 4 Tablespoons flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 1/2 cups leftover lamb, ground in processor
  • breadcrumbs
  • 1 Tablespoon parsley
  • pinch paprika
  • 1/2 teaspoon lemon juice

Preparation

Step 1

Melt the butter and stir in the flour and salt. Add the milk gradually. Continue stirring until smooth. Grind the leftover lamb, and with the parsley, paprika and lemon juice...add to the sauce. Let cool and shape. Roll in breadcrumbs, then in egg, then in the crumbs again (until the croquettes are well coated. Chill thoroughly.

In a heavy skillet, fry the croquettes in a little oil, turning three times to cook all sides. Croquettes should be crispy and light brown. Drain on paper towels, and serve.
