Absolutely Fabulous Carrot Cake

This is the best carrot cake ever, I got the recipe from Suzi But apparently she has never made it.

Ingredients

  • Buttermilk Glaze:
  • 2 cups flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 eggs
  • 3/4 cups oil
  • 3/4 cup buttermilk
  • 2 cups sugar
  • 2 tsp. vanilla
  • 1 8 oz. can crushed pineapple
  • 2 cups grated carrot
  • 3 1/2 cups shredded coconut-3 1/2 oz can shredded coconut. The amount is actually 1 1/3 cups.
  • 1 cup nuts
  • 1 cup sugar
  • 1/2 tsp. soda
  • 1/2 cup buttermilk
  • 1/4 lb. butter
  • 1 tblsp. Karo
  • 1 tsp. Vanilla
  • Cream Cheese Frosting:
  • 1/2 cup butter
  • 1 8 oz. package cream cheese
  • 1 tsp. vanilla
  • 2 cups powdered sugar
  • 1 tsp. ea. orange juice and peel

Preparation

Step 1

Sift dry ingredients. Beat eggs. Add oil, buttermilk, sugar and vanilla. Mix well then add the flour mixture, then the pineapple, carrots and the nuts. Prespray a 9-13 " pan, bake the cake @ 350* for 55 minutes.
Glaze:
Prepare in a large saucepan as it may foam up. Combine the sugar, soda and buttermilk,butter and syrup. Bring this to a boil, cook 5 minutes, then remove from heat and add vanilla.
slowly pour prepared glaze over the hot cake then let cool before you frost.

Frosting:
Beat all ingredients till smooth. Proceed with frosting and remember little carrots are cute on a carrot cake!
