Ingredients
- 30 English cucumber, diced
- 60 large tomatoes, each cut into 8 wedges
- 15 cups thinly sliced red onion
- 15 cups thinly sliced green bell pepper
- 15 cups whole, pitted kalamata olives
- 30 cups crumbled feta cheese
- 3-3/4 cups dried oregano
- 1-1/4 cups fresh lemon juice
- 3-3/4 cups olive oil
- salt and pepper to taste

Step 1
In a medium bowl, layer cucumbers, tomatoes, onion, bell pepper, kalamata olives, and feta cheese. Sprinkle with oregano, then drizzle with lemon juice and olive oil. Season with salt and pepper to taste.
