Ingredients

  • Salad Dressing
  • 4 tbsp extra virgin olive oil
  • 2 tbsp white wine or champagne vinegar
  • 1 tbsp dijon mustard
  • 1 tsp kosher salt
  • table grind black pepper to taste
  • 1 pinch granulated sugar
  • 1 tsp chopped fresh flat leaf parsley
  • 1 tsp fresh lemon juice
  • 4 cloves garlic, chopped
  • Salad
  • 4 cups mixed greens (I use Baby romaine)
  • 2 oz feta cheese , crumbled
  • 1/2 cup Kalmata olives

Preparation

Step 1

1. In a large bowl , whisk the salad dressing ingredients together
2. Add mixed greens and olives and toss with dressing,Sprinkle feta cheese on top

NOTE : Salad dressing can be made ahead
