Chilled Corn and Pimiento Salad

  • 2 T apple cider vinegar
  • 1 T canola oil
  • 2 tsp sugar
  • 2 tsp minced green onion
  • 1/2 tsp salt
  • 2 (15.25 oz) cans corn, drained
  • 1 (4 oz) jar diced pimientos, drained


Servings 4


Step 1

In medium bowl, whisk together vinegar, oil, sugar, green onion and salt. Add corn and pimientos, tossing to coat. Cover and refrigerate for 1 hr.
