Mom's Seafood Chowder

Ingredients

  • 3-4 slices bacon finely chopped or 2 tbsps butter
  • 1 med onion chopped
  • 3-4 stalks celery chopped
  • 1-2 cloves garlic minced
  • 1-2 tsps dried dill or thyme
  • Salt and pepper to taste
  • 1-2 cans cream celery soup
  • 1-2 cans cream potato soup
  • 2 soup cans milk
  • 1 cup 18% cream
  • 3 soup cans water
  • 250-500 mls of clam juice
  • 2 large potatoes diced
  • 1-2 seafood chowder Sea Lane
  • 2 lbs scallops
  • 2 lbs lobster
  • 2 lbs shrimp

Preparation

Step 1

In a large pot cook bacon until browned or melt butter. Pour off all but 1-2 tbsps bacon fat.
Add onion and celery and sauté gently for about 5 mins or until onion is soft.
Add garlic and stir for a few seconds.
Add soups,milk,water,clam juice,salt,pepper,dill or thyme and potatoes and bring to rapid boil over high heat and boil hard for 10 mins. This helps release starch from potatoes which helps thickens the chowder.
Reduce heat to med.and add seafood. Simmer very gently for 5-8 mins.
When ready to serve add cream and bring pot just to steaming hot don't let it boil,boiling causes separation at this point.adjust flavour and serve with rolls,biscuits or crackers.

Additional information: Add up to 1-2 cups chopped carrots with potatoes, sweet red pepper,or corn kernels for extra colour and nutrition. Add some white fish and salmon. Adjust amt. of fish for size of pot such as 6 lbs fish for large pot and 3 lbs for med.size pot. Same for cans of soup. If no soup on hand use 1/2-1/3 cup flour in water for thickenimg.
